We caught up with Chief Winemaker and Owner of Tempus Two
JAMIE SAINT
Tempus Two is one of Australia’s
leading wineries, located in the
Hunter Valley wine region (New
South Wales, Australia – about 2
hours drive North of Sydney).
Launched in 1997, Tempus Two
was originally called ‘Hermitage
Road’ after the road on which
the original winery was located.
However, the name ‘Hermitage’
has protected status in France and
the name was changed to Tempus
Two, which is Latin for ‘second
time’ Tempus Two pays homage
to classic Australian varieties
and styles by growing vines in
premium Australian regions like
Hunter Valley, Barossa Valley,
Langhorne Creek and
the Adelaide Hills.
Jamie, your website describes
Tempus Two as being ‘Born with
a Maverick Spirit’, is that still the
thinking today with your wines?
Yes! Absolutely. Tempus Two is a
cutting-edge Australian winery that
does things ‘just a little bit differently’.
We don’t follow tradition. We go
beyond it. And want our drinkers to
do the same; to enjoy our wines any
way they choose.
What makes Tempus Two
stand out from the crowd?
We are not shackled to a single region
or grape varietal. You don’t need to be
a sommelier to enjoy our wines and
we create wines that taste as good as
they look!...It’s that simple.
The Australian Government has
recently announced it has awarded
a grant of almost A$3m (£1.6m,)
designed to boost quality and
innovation within the burgeoning
low-alcohol and alcohol-free wine
market, how will this effect you?
Both the Silver Pinot Gris & Merlot
are exceptional wines and favourites
at Tolchards, what would you
suggest pairing these with?
For me the wines house the versatility
to be enjoyed on their own or with
food equally but if you’re going to put
me on the spot then....
The grant allows us to conduct
research with a key objective of
optimising the flavour and mouthfeel
of no and low products, as well as
drilling down into consumer and
market insights of the category.
The opportunity to work with a
group of leading industry partners
to take the growing no/low category
to the next level is something we are
enormously excited by, improving
the competitiveness, productivity and
sustainability of the Australian wine
industry. We want to position the
Australian wine sector as the largest
global producer of no/low wines.
I would describe the
Silver Pinot Gris as...
Fresh, floral with aromas of pear,
a definite lighter style of wine that
lends itself towards a grilled fish dish,
the zesty, acidity and refreshing
nature of the wine is perfect for
either the flavours of seared or
grilled fish...Yum....
And for the Merlot...
This a real winner for me. I really
enjoy the smoother lighter style of
red wine, with the red fruits flavours
and hints of bramble I would suggest
lamb being a good accompaniment.
How would you suggest
